You can find any recipe, tips, techniques or tricks that’s in here on the internet or in books.

What’s different about this is my personal perspective, knowledge and experience teaching new cooks the little things they should know, that no one else taught them.

This book aims to be a field manual to strategy and tactics in the kitchen. Which means that in the following pages I will take you through the process in much of the same way — and in the same sensitive, caring, respectful tone— as a new probie in my firehouse.

With an Associate Degree in Culinary Arts and I’ve been training people to cook for nearly 18 years. I’ve cooked and managed small kitchens and large ones where new cooks were coming in all the time.

I’m also a Fire Lieutenant with the Harrisburg Bureau of fire in Harrisburg Pa. I’m on Tower 1 with some of the best guys in the business.

When we aren’t fighting fires, training, or busting each others balls, we cook and eat some of the best meals I’ve had the pleasure of sharing with other people. With my professional cooking background, the men are always asking for tips and tricks that I could teach them.
